We went snowshoeing the other weekend in Sun Valley and it was so great to sit in the lodge and have some hot cocoa with whipped cream.  Unfortunately, we were probably drinking something like Carnation Hot Chocolate.

Here is a list of the ingredients in Carnation Hot Chocolate:

SUGAR, CORN SYRUP SOLIDS, HYDROGENATED VEGETABLE OIL (MAY CONTAIN COCONUT, PALM KERNEL AND/OR SOYBEAN OIL), MODIFIED MILK INGREDIENTS, COCOA, CELLULOSE GUM, SALT, DIPOTASSIUM PHOSPHATE, SILICON DIOXIDE, ARTIFICIAL FLAVOUR, MONO- AND DIGLYCERIDES, GUAR GUM, SODIUM ALUMINUM SILICATE.

Yuck — what are corn syrup solids anyway?  And “modified milk ingredients”?  Gross!  Whatever they are, they’re clearly not something we want to feed to our kids.

When we came home from Sun Valley, I whipped up my own version of hot cocoa with whipped cream — much healthier than that Carnation stuff.

And yes, there is an egg yolk added to my hot cocoa. For extra nutrition!  Did you know that Ovaltine was originally milk/cream with added egg? Hence the name, “oval”-tine.

Healthy Hot Cocoa with Grass-fed Whipped Cream

(Makes 2 large mugs)

Healthy Hot Cocoa with Grass-fed Whipped Cream: Ingredients

Hot Cocoa
Raw milk from grass-fed cows (1 cup)
Cream, grass-fed, organic (1/2 cup)
Powdered cocoa  (1 TBS)
Pinch of  sea salt
Maple syrup, ]raw honey,  or  organic cane sugar to taste
Optional: Egg yolks, raw, pastured (2)

Whipped Cream
Raw cream from grass-fed cows (1/2 cup or 4 ounces)
Maple syrup or raw honey to taste (I used approx 3/4 TBS)

Healthy Hot Cocoa with Grass-fed Whipped Cream; Equipment

Small saucepan
Mixing bowl
Hand mixer  or stand mixer  (you can also use a whisk)

Healthy Hot Cocoa with Grass-fed Whipped Cream: Directions

Hot Cocoa:
1. Mix everything in a saucepan on low heat.

Whipped Cream:
2. Add cream to the stand mixer or a mixing bowl.
3. Beat cream on medium.
5. As cream starts to thicken, add a little maple syrup or honey to taste.
6. Continue beating until whipped cream is stiff. Stop before it gets too chunky (it will turn into butter!).
7. Serve the whipped cream on top of the hot cocoa.

I use only raw milk and raw cream from grass-fed cows. This recipe also does not sacrifice the quality of the raw milk by heating it too high. Many of the enzymes will stay intact.
